Mint Julep Mocktail

I love horse races – I’ve been to several and would really like to make it back to the Preakness again one day since we live so close! Abby from the Glitter Guide team is heading to the Kentucky Derby this weekend (I’m so jealous!!!) so be sure to follow along for her adventure on Instagram. Her trip inspired me to create a virgin version of the classic Mint Julep! I can’t promise it’s quite as good but it’s something fun to sip on if you’re pregnant or don’t drink ;)

Mint leaves
1 cup Sugar
1 cup Water
3 Lemons
Soda water
Crushed Ice 

1. Make mint-lemon simple syrup. Mix equal parts sugar and water with a 2 cups of mint leaves and the juice of 3 lemons over low heat until the sugar dissolves and it begins to thicken. Let sit for 10-20 minutes so the mint flavor is released and then strain and let come to room temp. 

2. Fill glasses with crushed ice (I just put mine in the blender briefly) and pour a generous amount of syrup in each glass. Top with soda water and garnish with mint leaves.
