I’ve always been a lover of traditions, but after I had children my desire to create family traditions of our own has only grown. Knowing I wanted to do something special (and easy) for the first day of school I found an applesauce snack cake recipe to make for Piper. And so our new tradition was born! I make this cake vegan by using a flax egg (1 tbs ground flax seed + 2 tbs of water) since Flora is allergic, but she won’t even taste it! You can top this with cinnamon sugar (add before putting it in the oven), buttercream or cream cheese frosting! I personally make a dairy free frosting that I’ll be sharing soon ( I just wing it with Earth Balance, powdered sugar, vanilla extract & a splash of dairy free milk) but I’m going to write down the exact measurements and post it here. I make it the night before school so it’s ready!
Ingredients
1 cup Flour
2 tsp Baking Powder
1/4 cup Brown Sugar
1/4 cup Granulated Sugar
1/2 tsp Ground Cinnamon
1 cup Applesauce
1 Egg or 1 flax egg (combine 1 tbs of ground flax and 2 tbs of water and let sit for 5 minutes)
1/4 cup melted Butter or vegan butter (we use the soy-free Earth Balance)
1 1/2 tsp. Vanilla Extract
Directions
Preheat the oven to 350 and grease an 8×8 baking dish.
Combine dry ingredients.
Combine wet ingredients.
Stir wet ingredients into dry until combined.
Bake for 25 minutes.
*Top with cinnamon sugar before baking or your favorite frosting after cake cools!
