The 5 Easy Meals I’m Making This Week: 8/14

Last week’s post with our weekly meal plan was so popular that I decided to make this an ongoing series for  while! As I mentioned my husband is sticking to a modified vegan diet right now so we are having another week of meatless meals.

Monday: Spiralized Zucchini Mac & Cheese With An Oat Crumb Topping (Can’t wait to make this recipe from The Greenhouse Cookbook — one of my more recent favorites! I found the recipe online here).

Tuesday: I’m OFF DUTY for a dinner with friends — so I’ve put this pasta with butter, parmesan and frozen peas on the menu for Austin to make for Piper. It’s one of her very favorites – I usually use orzo.

Wednesday: Quinoa Fried Rice (I’ll add tofu for a little protein — but chicken or pork would be equally good!)

Thursday: Falafel Salad (You can use Trader Joe’s frozen falafel or make your own, I’m making my own with my favorite mix because it’s so easy)

Friday: Cauliflower Crust Pizza with Grilled Peaches & Arugula (So excited for this one! I’m buying Trader Joe’s frozen cauliflower crusts)

Saturday: Pistachio Crusted Salmon with Garlic Smashed Potatoes
