Bringing Up Bebé’s Chocolate Cake Recipe

After a few busy weeks Piper and I finally enjoyed baking again last weekend. This little girl loves to get messy in the kitchen! We are cooking our way through the recipes in Bringing Up Bebé (get the famed yogurt cake recipe here) and tried the Gateau Chocolat (Chocolate Cake) on Sunday. It was really easy for Piper to help with measuring, so moist, fluffy and delicious! It’s rich and a small slice is all you need for an after nap treat….and it pairs beautifully with a hot cup of coffee!

I let Piper help me measure for this one — using the tablespoon was easy and fun for her. She also helped with all the stirring. After we had everything prepared I let her play with some flour and bowls, her favorite part of baking.

She patiently waited for the cake to bake and cool and we topped it with some fresh whipped cream and ate it after her nap.

It was the perfect Sunday treat, and I enjoyed it all week with my coffee in the morning!

Gateau Chocolat from Bringing Up Bebé

Ingredients

Butter + flour to grease the pan
5 oz dark baking chocolate
7 tbs unsalted butter
6tbs powdered sugar
6 tbs flour
3 large or 4 small eggs, separated
Salt
Optional: whipped cream or créme fraîche

Directions

1. Preheat oven to 350 and grease a 9in round cake pan.
2. In a saucepan over very low heat, slowly melt the chocolate and butter.
3. Remove the chocolate mixture from the heat. While mixing with a wooden spoon, sprinkle in the powdered sugar, then the flower (Note: I’d recommend using a sifter for the powdered sugar to avoid clumps). Add the egg yolks one by one and stir.
4. In a seperate bowl, beat the egg whites with a pinch of salt until they form stiff peaks (Note: I did this before mixing everything above so it was ready).
5. Slowly fold the egg whites into the chocolate mixture. Do not overmix.
6. Immediately pour the batter into the pan. Bake for 30 minutes.
7. Let the cake cool. Serve with a dollop of whipped cream.
