The greatest part about summer is that so many simple moments can be enjoyed outdoors, which is exciting for our whole family (Sullivan especially loves to play fetch in our yard). I love nothing more than ending a busy, hectic day in our peaceful yard. The White Company is a British lifestyle brand that just landed in the USA, with their first store opening in New York last month. Their products are mostly produced in Europe and in addition to a beautiful assortment of housewares – they have clothing (for you and baby), skincare, sheets, towels and the like. In short, their products really elevate the everyday moment, making them something special — like this simple backyard dinner I put together.  Keep reading for the recipe of my favorite summer pasta dish!


Today I’m excited to share my all-time favorite summer pasta recipe! This is a riff off of a similar recipe my sister has been making for our family for years, but I eliminated a few steps to make it quicker and easier for my busy lifestyle. Here’s why I love this pasta dish:

-You make the sauce ahead of time, so it’s great for weeknights or dinner parties

-You can add any protein you’d like to make it a more complete meal

-It’s so quick, it takes less than 30 minutes to pull together

-Piper LOVES it

-It utilizes fresh, summer tomatoes — my favorite!

Wooden Serving Platter

30 Minute Summer Pasta

Ingredients
5 ripe tomatoes
Olive oil
1 tbs sugar
2 cloves of garlic, minced
Salt + Pepper

Directions
1. Roughly chop tomatoes and place in a glass bowl.
2. Add garlic, sugar, a pinch of salt & pepper and a hefty guzzle of olive oil and stir.
3. Place plastic wrap or foil to cover and set out on your counter all day, or at least 2 hours.
4. Cook pasta and toss with sauce. Top with protein of your choice and parmesan cheese.
*In these photos I roasted shrimp with a little bit of olive oil, salt and pepper until cooked through!
