Entertaining: Gin Fig Fizz

 This week’s cocktail is the Gin Fig Fizz! I picked up figs over the weekend and have been trying to come up with a creative cocktail. I wanted something light and crisp and decided to make fig infused simple syrup and add it to my standby drink of choice, gin and soda water. I like to make a large batch of simple syrup and store it in a mason jar in the fridge, it keeps a few weeks.  Enjoy!

Gin Fig Fizz
1 part fig infused simple syrup
1 part gin
squeeze of lemon juice
top with soda water
garnish with rosemary sprigs

Fig Infused Simple Syrup
1 part sugar
1 part water
2 figs per 1/2 cup sugar
Chop fig. Stir water, sugar, fig in a saucepan over low heat until sugar is melted. Let sit for 10 minutes. Strain and pour in a glass jar.
