Homemade Limoncello

In college I spent some time studying in Italy and on a trip to Cinque Terre I fell in love with Limoncello. As we plan our honeymoon in Italy (!!!) I’ve been drawn to all things Italian and discovered how easy it is to make Limoncello at home! Really – it’s so easy and also makes for the perfect favor for a dinner party, spring bridal shower etc. I bottled mine in these cute bottles from Michael’s and then just tied a little piece of lace around each one. Read on for the recipe and check back later this week to see how I serve it!

Homemade Limoncello
12 organic lemons
Grain alcohol or vodka
Large mason jar
Sugar

There is no exact recipe for Limoncello – just play around with your ratios! Wash your lemons and then carefully peel each one and place them in a big mason jar. Cover with vodka or grain alcohol and screw on the top. Let the lemon peels sit for 4-10 days, the longer the better. After the flavor has developed strain the alcohol out using a fine strainer or coffee filter (this is what I did, tedious but worth it).

Create a simple syrup using equal parts sugar and water, simmer over low heat until all of the sugar has disolved. Mix the simple syrup with the lemon alcohol until desired sweetness is reached. I used about 2-3 cups of simple syrup in mine and it’s still quite strong.  Store in the freezer!
