In The Kitch: My Grandma’s Coconut Macaroons

Second to my mom’s sugar cookies, this Coconut Macaroon recipe my grandmother Angela (Nina to me) used to make is my favorite. I’ve already made it twice this season and we only have a few left so I forsee another batch in the future! This recipe is so simple and a crowd pleaser. You don’t have to dip the cookies in chocolate but it makes a nice treat. I added chopped almonds & golden sprinkles on some too.

Nina’s Coconut Macaroons
1 stick of oleo (butter works too)
1 cup of sugar
1 egg
1 cup flour
1 tsp. almond extract
3 cups coconut packed, unsweetened

Cream oleo, sugar and egg together. Mix in the rest of the ingredients. Bake on an ungreased cookie sheet for 12 minutes at 350 degrees.
