In the Kitch: Recent Cooking Adventures

Yikes, I realized it’s been forever since I’ve shared a recipe here on Style Within Reach – rest assured that doesn’t mean I haven’t been cooking! It’s a miracle that I manage to cook dinner 4-5 nights out of the week, I can’t imagine taking the time to photograph the process in the proper light (my tiny kitchen “window” doesn’t really do the trick) with my schedule right now. So in the meantime I thought I’d share some of my adventures in the kitchen via my Instagram photos.

My boyfriend recently surprised me with a new blender, so we’ve been making a lot of juices & smoothies. My favorite so far is an adaptation of this recipe. I use fat free Greek yogurt, apple or pear, kale, spinach, agave nectar, frozen banana or mango and almond milk and drink it for breakfast-delish!

My friend from high school, Julia has an amazing cooking blog– it’s full of fresh, clean recipes and I haven’t been disappointed yet. Whenever I am looking for something healthy yet satisfying I turn to her blog. Her recipe for Sweet Corn Cakes was delish, especially served over a bed of greens with avocado and goat cheese crumbles.

A crustless quiche is my go-to recipe for when I over buy vegetables and have no idea how I will ever eat them all before they go bad. I lightly saute the veggies (squash & asparagus are my favorite), lay them in the bottom of a baking dish and cover with an egg/egg beaters/herb mixture. Right before I pop it in the oven I sprinkle a little cheese on top. I often eat this the next day with salad for lunch!

I’m going to be honest with you and not pretend this wasn’t all we ate for dinner one night last week. Perfectly baked and crispy zucchini fries. Seriously easy and seriously delicious. After browsing a few recipes I landed with a perfect combination- slice zucchini and shake in a bag with 1 tbs flour, coat in egg (or egg beater) wash and then drudge through panko breadcrumbs (I seasoned mine with basil, oregano and parmesan cheese) bake and devour !

Can’t forget about the cocktails. This Rosemary Gin Fizz recipe is such a crowd pleaser. I followed Joanna’s recipe and will probably be making  a pitcher of this refreshing drink on Friday!
