Happy Friday! I’m up in NYC for the weekend to take care of some wedding details and to attend the Veuve Clicquot Polo Classic tomorrow with my girlfriends (can’t wait!!!). I stumbled upon a recipe for this chickpea, avocado, goat cheese combo on Pinterest a while back and it’s been in constant rotation since. I eat it for lunch at least once a week but it’s a great summer side dish too! Keep reading for the recipe and have a wonderful weekend!
Chickpea + Avocado Salad
1 can of chickpeas
1/2 avocado (cubed)
3 tbs goat cheese
Juice of 1 lemon
Olive oil
Salt + Pepper
Drain chickpeas and rinse in a colander to remove salt. Toss together with avocado and goat cheese. In a small jar mix together dressing of olive oil, lemon juice, salt and pepper and pour over salad!
