Red Wine Granita Recipe

I’ve been wanting to try a granita recipe for a while — and when I spotted this one that uses red wine as a base it was a matter of days before I got to work on this summer treat! I served it with a dollop of freshly whipped cream — but it would also be great with ice cream (vanilla, coconut or even a rich berry flavor). This dessert is easy to make the day before you wish to serve it and all you have to do is assemble right before you serve it – plus it just looks so pretty! Read on for the recipe!

Red Wine Granita
1/2 bottle of red wine (I used Pinot Noir)
1/3 cup of sugar
1 cup of water 
 
1. Pour wine into a shallow glass baking dish.
2. Over medium heat stir together the sugar and water until dissolved. Immediately pour into the wine and stir together. 
3. Let this mixture cool on the counter for 20 minutes and then cover it with tin foil and place in the freezer. 
4. Check after about 40 minutes and then begin scraping with a fork every 30 minutes. I found the process to take about 5 hours total. After it’s all scraped it keeps for several days.
