A lot of people in my life are pretty “anti-Kale”. I happen to be obsessed with this leafy green and go through a bundle a week. The last time I was in NYC I shared the most delicious chopped Kale salad with two of my girlfriends and have since re-created my own version that even non-Kale lovers seem to enjoy!
The Best Kale Salad
-1 bunch of Kale, de-stemmed & ribbed and chopped (I prefer Dino Kale) *If you are new to Kale, I suggest getting it at Whole Foods or a farmer’s market – not the bagged kind from another grocery store, it’s much better.
-1/2 cup fresh grated Parmesan cheese
-1/2 cup pine nuts
-1/4 cup Lemon juice
-1/4 cup honey or agave
-1/4 cup olive oil
-1/4 cup white wine vinegar
1. Start by toasting the pine nuts over low heat in a frying pan just until they are slightly colored and fragrant.
2. Wisk together lemon juice, honey, olive oil and white wine vinegar. Season with salt + pepper.
3. Top kale with pine nuts, shredded parmesan and a healthy dose of dressing. Grate a little more cheese over each serving and enjoy!
*Store dressing in fridge for up to a week
