The Best Chewy Gingersnap Cookies

While I was doing some holiday shopping at Target the other day I decided it was time to officially kick off my holiday baking! I love these soft & chewy gingerbread cookies that Trader Joe’s sells and I sought out a recipe that would replicate them. I got lucky on the first try with Brown Eyed Baker‘s version and have to say these rival that taste I was going for! I couldn’t resist these copper measuring cups that I’d been eyeing at Target for a while — and also picked up all the ingredients (including the best molasses!) and new cooling racks while getting my holiday shopping done.

Also…. this cute mug? So festive – and it would make a great gift filled with homemade marshmllows :)  I highly reccomend trying this recipe – it’s a definite crowd pleaser!
