Easter Cake Cookie Bars

I made up the wonky name cake cookie bars – but couldn’t come up with a better way to describe these ! I found a recipe for these ‘blondies’  when searching for recipes to make with a box of cake mix. I wouldn’t exactly say they taste like blondies to me – more like a thick, chewy cookie bar, especially when topped with butter cream frosting! 

They are SO easy to make.  Mix up your boxed cake mix following the directions below adapted from Sally’s Baking Addition , top with a thick layer of buttercream frosting (you can buy or make this yourself) and then press in Cadburry eggs on top. We devoured these in a few days. They are sweet. Rich. Filling. Perfect holiday treat for Spring and Easter :)

Easter Cookie Cake Bars

Ingredients

1 box of yellow or white cake mix
1/4 cup vegetable oil
1 egg 
1/2 cup milk

Directions

  1. Preheat oven to 350 degrees. Spray 11×7 baking dish with non-stick spray. 
  2. Combine cake mix, oil and egg and stir. Slowly add the milk until just combined.
  3. The batter will be thick, gently press it into the glass baking dish. 
  4. Bake for 25 minutes. 
  5. Let cool and top with buttercream frosting & Cadburry eggs (the ones used here are the “shimmer” variety).
