Easy Dinners We Are Making This Week

This is just a little late, but after taking a few days off for my best friend to get married I’m catching up – and finally planning out the menu for the week. Tonight we had my go-to for when we have no groceries – a mishmash of roasted veggies (brussels sprouts and potatoes tonight), sliced chicken sausages and hummus on the side. Easy, filling and good! Now – here are the other meals on our menus.

Chicken Meatball Noodle Soup – always up for a comforting chicken noodle soup and love this take using meatballs!

Thai Butternut Squash Red Curry: Nothing says fall to me like a comforting, cozy curry. Dionna is making this one and I’m adding it to my list, too!

Magic Garlicky Tofu: I’ve been looking for a new tofu recipe for a while and this one sounds very promising.

Slow Cooker Beef Ragu With Pappardelle: Slow cooker season is upon us!! Dionna is making this decadent yet easy dish and I think I will have to try it out soon, too.

And then on Friday we are making the Sausage & Olive pizza from my friend, Kate‘s new cookbook New England Invite (It looks so good)!

Also Dionna is making these pumpkin muffins from Pinch of Yum and I’m trying this pumpkin muffin recipe from Gimme Some Oven but making it vegan with flax eggs, wish me luck!
