Pesto Salmon + Veggies: This is back in my weekly rotation. I like to use the vegan pesto from Trader Joe’s and I picked up some new frozen carrot coins they had that looked good. I’m trying to eat leafy greens with every meal so I’ll probably make a salad, too! 

And with the rest of that vegan pesto I’ll make my go-to solo dinner. Trader Joe’s Cauliflower Gnocchi with wilted spinach and sliced turkey sausage. I pan fry everything together in a little olive oil and add the pesto at the end. Top with parmesan – it’s so good, filling and comforting for busy weeknights! 

Korean Beef Bowls: I haven’t made this in weeks but it’s one that we all really love and it’s so quick & easy. I serve it with frozen Jasmine rice from Trader Joe’s and frozen broccoli. 

 

This sheet pan dinner is really easy and a great way to fill up on veggies. I serve it with brown rice.

Friday is always pizza night in our house but it’s been weeks since I did homemade — and since it’s February I’m going to try making this cute heart shaped pizza :)
