I made the EASIEST and most delicious dinner this week and wanted to share the very simple recipe! I’m hoping to share one dinner recipe with you a week if I can keep up :)
Ingredients:
Cauliflower Gnocchi
1 1/2 Cups Cubed Butternutquash
2 Handfuls of baby kale
3 tbs butter
Parmesan cheese to top
Directions:
+ Toss butternut squash with olive oil, salt & pepper and put on baking sheet
+Spray other half of sheet with non-stick spray and lay out frozen gnocchi
+Bake for 25 mins on 400 degrees flipping once
+When almost done melt 3 tbs butter over low heat until melted
+Toss in gnocchi, squash, and kale until kale wilts
+Top with Parmesan
I’m going to try with chicken sausage or a fried egg on top. Yummy!
