Toddler Approved Strawberry Chia Compote

We’ve been using the fresh strawberries from our adventure last week non-stop. So far our favorites have been a yummy oatmeal banana strawberry smoothie (recipe coming soon) and this strawberry chia seed compote. Piper also has been loving a few strawberries blended into her unsweetened applesauce. I love this compote though, because you can use it a ton of different ways, on toast, in yogurt, on top of ice cream in place of jam on a sandwich, the options are endless. I also like it because it only has a small amount of agave, no added sugar and because both Piper and I enjoy it.

I’ve been serving it to Piper mixed with full-fat greek yogurt. A great alternative to the sugar laden strawberry greek yogurt at the grocery store and the chia seeds pack in omega-3’s.

Strawberry + Chia Seed Compote

Ingredients

2 cups sliced strawberries
1/4 cup water
1 tbs agave syrup
1 tbs chia seeds

Directions

  1. Combine all ingredients in a sauce pan over low heat.
  2. Simmer for 20 minutes, stirring frequently.
  3. When thickened and the strawberries have begun to breakdown, remove from heat.
  4. Let stand to thicken and cool  for at least 30 minutes before serving.
  5. Store in the fridge!
