Hope that you had a great weekend! Unfortunately Austin was working Saturday & Sunday so I didn’t have too much time to prep meals for the week but I did manage to get to the grocery store thanks to help from my sister! I have a busy week with a shoot, meeting in Baltimore, a huge proposal due tomorrow and a play date on Thursday — so I was thinking ease and comfort when I came up with my menu. It’s also freezing here today so warm & cozy meals are a must.
Monday: Sausage, Kale & Gnocchi Soup + No Knead Skillet Bread. I love tortellini soup during the winter months but since I can’t have dairy right now (due to Piper’s sensitivities) and thought this may be a good replacement! It will be my first time trying both recipes — and I’ll eat the leftovers for lunches this week. Homemade bread may seem like a stretch for a Monday night but I’ll make it late this afternoon before our nanny leaves!
Tuesday: Vegetarian Shepherds Pie. Excited to try this recipe!
Wednesday: Leftovers
Thursday: One Pot Greek Chicken Lemon & Rice – this recipe is SO easy and good!
Friday: Omelettes, French Fries & salad. Frozen french fries are my weakness/ indulgence since I can’t have much else right now (oh, and potato chips — too!). There are several kinds at the grocery store made without soy, sadly all of Trader Joe’s contain soy. I’ll make my omelette with whatever veggies I have on hand and maybe pick up some ham or turkey to add.
