Dairy-Free Protein Packed Pudding Recipe

The other day I made a really easy pudding recipe for the girls. And it wasn’t just any pudding – it was packed with tofu and free of dairy! Because of Flora’s allergies I’m always on the hunt for dairy-free treats that we can all enjoy and we really loved this recipe from the new The Tales of Tofu from House Foods ebook. It was a quick and easy recipe and I plan on making it for an after school treat during the busy fall season. The best part is that instead of being loaded with sugar this pudding recipe is packed with protein.

I love making recipes for the girls that are not only QUICK (like most working moms, I never have much time in the kitchen) but also offer nutritional value, especially when it comes to treats. Piper devoured hers and asked for seconds – always a bonus!!

Here’s the super easy recipe!

Tofu Chocolate Pudding
Ingredients
1 pkg. House Foods Tofu Firm
1 cup chocolate chips
2 Tbs. maple syrup
1/4 soy milk

Optional toppings:
Chocolate whipped cream or chocolate shavings

Directions:
Melt the chocolate chips in a double boiler or microwave. Chocolate should be smooth and silky. (If using a microwave, heat chocolate chips for approximately 15 seconds at a time, stirring frequently in between, until smooth.)

While chocolate melts, add the tofu, vanilla, and maple syrup to a food processor and blend until smooth. Slowly add in the chocolate and soy milk and blend until mixture is well combined and smooth. Divide among bowls or pudding jars and refrigerate for at least one to two hours before serving.

Top with chocolate whipped cream, chocolate shavings or your choice of toppings.
