This is our first FULL week of school (Piper goes 3 full days) and we also have a doctors appointment, I have several projects due and then one of my best friends is coming to visit from NYC! Needless to say, it’s going to be pretty busy and here are some quick + easy dinners on my menu. Vegan Pumpkin Mac & Cheese (actually made this last night with leftovers for the week – served it with wilted kale and it was SO good. I used canned pumpkin – obviously!)
Chicken Cutlets with Summer Squash & Feta – I’m such a summer squash lover and want to eat it all up before the season ends!
Sheet Pan Sausage & Potatoes (I’m using Chicken Sausage from Trader Joe’s and serving with a green salad)
Chicken Meatball Zoodle Soup (May or MAY NOT pick up frozen meatballs for this one)
Sweet Potato Quesadillas (I’m making my own nut-free pesto)
