Can you believe it’s back to school already? Summer went FAST and we’re trying to mentally prepare for fall already. Getting the kids back to a school schedule is always a little hectic, but these quick and easy dinner ideas should make the transition a little more bearable.
Baked Popcorn Chicken (a healthy alternative to chicken fingers)!
Guacamole burgers with spicy sweet potato wedges (these are made with vegan Beyond “meat” but you can substitute beef, turkey, veggie, etc.)!
Baked Chicken Meatballs – these are delicious to eat plain and dipped in sauce or with your favorite pasta.
Instant Pot Chili – dump all the ingredients into your instant pot or pressure cooker and this dinner comes together so fast!
Corn, tomato, and avocado pasta salad (summer flavors all wrapped up in one)!
Tomato Soup (pair with grilled cheese for a more complete meal)!
