I’ve been trying to save easy dinner recipes for the past few months and I’ve rounded up my very favorites — tried & true dishes I’ve been cooking for years and new recipes I can’t wait to try out. I love pasta and comfort food, easy slow cooker recipes and I’ve tried to include healthy options too!
Last week’s post with our weekly meal plan was so popular that I decided to make this an ongoing series for while! As I mentioned my husband is sticking to a modified vegan diet right now so we are having another week of meatless meals.
We are finally back home and getting back into our normal routine — I spent a wild Friday night plotting & planning a bunch of easy and somewhat healthy meals to eat the next week!

Toddlers are hard to please when it comes to meals and snacks — if it’s not Goldfish or fruit Piper’s usually not too excited about it. Lately I’ve been trying to mix up our snack routine.
After a few busy weeks Piper and I finally enjoyed baking again last weekend. This little girl loves to get messy in the kitchen! We are cooking our way through the recipes in Bringing Up Bebé (get the famed yogurt cake recipe here) and tried the Gateau Chocolat (Chocolate Cake) on Sunday. It was really […]
If there’s one thing I can always count on Piper to eat it’s a smoothie. I try to give them to her every afternoon after her nap, and most of the time I make her a green smoothie but when we had an abundance of fresh strawberries I made her this one instead. Let me […]
We’ve been using the fresh strawberries from our adventure last week non-stop. So far our favorites have been a yummy oatmeal banana strawberry smoothie (recipe coming soon) and this strawberry chia seed compote. Piper also has been loving a few strawberries blended into her unsweetened applesauce. I love this compote though, because you can use […]
If you read Piper’s 21 month update you know we’re still struggling with a very picky eater on our hands. I’ve been trying my best to be patient and think of clever ways to sneak in vegetables to her meals. To be honest dinner time has become pretty dreaded around here — typically I’m […]
Last weekend we had so much fun baking these Quinoa Banana Cookies that on Saturday Piper and I baked again together. I think this will need to become a weekly routine in our house! I loved the book Bringing Up Bébé when I was pregnant (in fact I just started re-reading it) and have been […]
Yesterday Piper and I spent the afternoon baking healthy Banana Bread Quinoa Cookies and it was the perfect Sunday. Piper loooooves cookies and I wanted to make something healthier to have on hand for her treats. She was really into helping me and gobbling up her handy work. I’ve learned a few things from […]
I’ve talked at length about Piper’s picky eating habits and the meals she does like to eat but I thought I’d share a few of our favorite cookbooks that I’ve used since I first started making her food. As I mentioned in her 18 month update, right now I’m only serving her what we eat […]
